   CHARACTERISTICS

Bright straw gold colour with delicate bubbles. Initially fresh and fruity on the nose, with aromas of citrus fruits followed by candied and exotic fruits. On the palate it is very fresh thanks to the low dosage. A good minerality and initial flavours of citrus fruit, almond, toast, but also a hint of redcurrant. A rich middle palate without being heavy leads into a long, clear finish. Overall, a complex, flavoursome Champagne with a distinctive style.

 

THE WINERY
Bruno Paillard is a pioneer within the Champagne region.  In 1981, at the age of 27, with no vineyards and no money, Bruno set out to start his own Champagne house in a region where a new house had not been created in nearly a century.  He initially rented a cellar and carefully selected the grapes from independent growers.  He moved on by inventing the first completely “Ex Nihilo” cellar which consists of extremely strict control of temperatures, lighting and humidity. He was quickly recognized as producing some of the best wines in the region. In the 1990s he built a state of the art winery with stainless steel, glass and wood, combining traditional know how with the newest qualitative techniques.  In 1994 he started to purchase his first vineyards and today has 26 hectares (1/3 of production needs) including 12 hectares of Grand Crus. The dedication and passion to produce only the highest quality wines is outstanding. This includes the selection of the highest quality grapes, use of first pressing only, separate vinifications, addition of “reserve wines," ageing 2 to 3 times longer than stipulated by the AOC and very small dosage, respecting the purity of the wines.
